How did you get into coffee?
Long story short: I have always loved the smell of fresh coffee in the morning. It’s a sacred moment of reflection before I start my day. I remember buying my first bialetti machine on a small market in Italy and taking it everywhere on my travels: Spain, Portugal, Chili, Argentina,… When I was in South America I was surprised about how all coffee was exported and there was not even a local culture of drinking coffee. In 2015 I started a barista course in Brussels. The love grows stronger every day!
What is your first memory of coffee?
I remember drinking my first filter coffee at my grandmother’s house on a rainy sunday afternoon.
What do you do at Apex Coffee?
My job is to spread the gospel of specialty coffee to the offices of companies and entrepreneurs in Brussels. I introduce them to the world of great coffee and take care of their orders.
Favorite coffee of the year?
No doubt: the Burundi Kayanza Mpanga from Blue Bottle. And the Ethiopia Sidamo Korate at Mucho Gusto Coffee.
What do you order when you go to a bar?
If not at a coffee bar, I love a fresh Grosse Bertha by the Brussels Beer Project or a home made Ice Tea
